Sweet Carrot Pancakes with Marshmallow Creme

Despite all the carrots, I wouldn't exactly call this recipe healthy. It sure is yummy though! This would be a fun breakfast to have on Easter.

First, shred approximately 5 carrots in a food processor. You should end up with 2 cups of shredded carrot. Put this into a large bowl.

Mix in 1 egg, 1 cup of milk, (any kind will work) 1 Tbs of vanilla, 2 Tbs of apple sauce, and 1/4 of a cup of brown sugar. In fact, add a little less than 1/4 of a cup. These are going to be sweet enough without going crazy with sugar, (I assure you that this is the only time I will ever, EVER say not to go crazy with sugar!)

Back to your food processor. Use it to finely chop 8-10 macadamia nuts. No macadamia nuts? Sounds like it's time for a visit to Hawaii. Until then though, other nuts, like walnuts or pecans, should work just fine. Mix the chopped nuts in with the other ingredients.

Now it's time to add some dry ingredients. Mix in 2 tsp baking powder, 2 tsp cinnamon, 1/2 tsp ginger, and a pinch of salt. When everything is well blended, add 3/4 C whole wheat flour and 1/2 C white flour. Last but not least, (unless you don't like them,) add 1/3 C of Craisins.

Get your favorite pancake-makin' pan hot and buttery and pour on some batter. Use a spoon or a spatula to spread the batter out a little bit. Your pancakes won't taste quite right if the batter sits there in a thick glob.


 When your 1st pancake is done and on a plate, spread a layer of marshmallow creme on top while a 2nd pancake cooks. The creme is going to end up hidden away as a tasty surprise. You'll see.


 When your 2nd pancake is ready, layer it on top of the marshmallowy one. You can be lazy and serve this with regular maple syrup or you can whisk together some powdered sugar and milk to make icing to drizzle over the top. As you can see, I went the lazy route.


 Oops, it looked so yummy that I started eating it before taking a photo. See the little blob of marshmallow creme?
